Rojões (fried pork)

In Portuguese: Rojões

Ingredients:

  • 750 g loin pork
  • 500 g pork-ribs
  • 4 cloves garlic
  • 2 soupspoons red sweet-peppers-pulp
  • 3 soupspoons lard
  • 1 bay leaf
  • glass white wine
  • 750 g new potatoes
  • salt, pepper and lemon-juice to taste

Directions:

Cut the loin and the ribs into small pieces and season with the chopped garlic and all the other ingredients.
Let it all lie in this marinade till next day.
In an earthenware pan, melt the lard, add the meats and cook on a low fire, keeping on the lid.
Peel the potatoes and add them to what is cooking, until they are cooked and golden.
Ornament with slices of lemon.
