Mackerel In Onion-Sauce

In Portuguese: Carapaus de Cebolada

Ingredients:

  • 1/2 kg of small mackerel
  • 2 medium-sized onions
  • 2 cloves garlic
  • 2 medium tomatoes
  • 1 bayleaf
  • 3 soupspoons of olive oil
  • salt and pepper to taste
  • sufficient oil to fry mackerel

Directions
Having cleaned the mackerel, pass them lightly through flour and fry them on a hot fire. Let them drain on brown paper, while preparing the onion sauce.
Cut the onions in extremely fine slices, likewise the garlic, and fry them in olive-oil with the bay leaf, on low fire.
When they begin to take on a golden colour, join the tomato-pulp and allow to fry a little longer.
Place the mackerel on a dish and cover with the onion-sauce.
Allow to grow cold and serve.
