In Portuguese: Tripas À Moda do Porto
Ingredients for 4 people:
- 1 Kg butter beans
- 1 Kg tripe
- 1 knuckle of calf
- 1/2 chicken
- 2 smoked sausages “chouriças”
- 200 g uncured bacon “toucinho”
- 200 g smoked ham “presunto”
- 1 pig’s ear
- 3 cloves
- 2 carrots
- 1 large onion
- paprika
- cumin
- parsley
- garlic
- 2 bay leaves
- salt and pepper
Directions:
Boil the beans separately.
Boil the tripe and the knuckle of calf with the bay leaves.
Fry the onion with the crushed garlic, when the onion is brown add the uncured bacon, smoked ham and the sausage, all chopped small.
Then add the boiled tripe and knuckle also chopped small, and a little water.
Next, add the whole pieces of meat (the pigs ear, the other sausage, I and the half chicken) and leave to cook.
When the meats are well cooked, check the seasoning and add the cloves, paprika, cumin, and the carrots (chopped).
Take out the whole pieces of meat (the ear, “chouriça” and chicken).
Then add the beans to the pot, add salt and pepper if needed, and leave to simmer until all the meats and beans are soft.
In the meantime, cut the ear in strips, the sausage in slices and part the chicken.
Put the “tripas” in a serving dish and spread the meats on top.
Sprinkle some cumin and chopped parsley on top and the dish is ready to serve.
