In Portuguese: Bolinhos (ou Pastelinhos) De Bacalhau
Ingredients:
- 400g dried and salted codfish (which has been soaked, overnight, in cold water)
- 250 g potatoes
- 1 onion
- 1 large bunch of parsley
- 4 eggs
- pepper and grated nutmeg to taste
- oil for frying
Directions:
Boil the potatoes and the codfish.
When boiled, remove the skins and bones and pass through a sieve.
Mash the potatoes and mix with the sieved codfish.
Chop the onion and the parsley very finely and mix with the above.
Add the eggs, one by one, beating energetically.
Season with pepper and grated nutmeg and verify the salt.
Heat the oil and fry the cakes, having moulded them into the shape and size of rather small eggs, with the help of two soupspoons.
Lay them on brown paper, to absorb superfluous oil.
