Custard, Portuguese-style

In Portuguese: Leite Creme

Ingredients:

  • 5 dl milk
  • 5 egg yolks
  • 200 g sugar
  • Rind 1 lemon
  • Sugar to burn

Directions:

Beat the yolks with the sugar, then add the cold milk and the lemon rind.
Always stirring, take to low heat until it thickens, but do not let it boil, so as not to boil the eggs.
Pour into individual cups or bowls, and when quite cold, sprinkle with sugar, then burn it with a red-hot iron.
