Custard Tarts

In Portuguese: Pastéis de Nata(1)

Pastéis de Nata

Ingredients:

  • Filling:
  • 4 egg-yolks
  • 2,5 dl cream
  • 1 teaspoon flour
  • 100 g of white sugar
  • rind of 1 lemon
  • cinnamon and sugar to sprinkle
  • Puff Pastry:
  • 250 g flour
  • 250 g of margarine (special for puff-pastry)
  • 2 dl water
  • salt to taste
  • margarine for greasing tins

Directions:

Knead the flour with the warm water and salt.
Divide the margarine into 5 equal parts.
Roll out the dough, and spread over it one of the 5 parts of margarine.
Now roll up the dough into a sausage-shape (with the marge in it), then roll it out again.
Repeat this process, until the margarine is finished.
When you have no more margarine, roll out the dough just once more and prepare little tin cups, greased with margarine.

The filling:

Mix the egg-yolks with the sugar and the flour in a pan, then add the cream and the lemon-rind.
Take the pan to the fire only long enough for it to boil up.
Remove from fire, take out the lemon-rind and allow to cool.
Fill the cups and put in very hot oven.
When serving, sprinkle with sugar and cinnamon.

  1. These are in fact the famous “Pasteis de Belém” which are registered brand. The original ones can only be sold in a specific caffe in Belém, an area of Lisboa, capital of Portugal. Their recipe is supposed to be a secret but that is nothing more than poetry… If you are out of Belém, you have to order these wonderful tarts by “pasteis de nata” and not by “pasteis de belém”.
