Fried Mackerel With Turnip-Greens Rice

Ingredients:

  • 1 kg small mackerel
  • Salt to taste
  • Oil (for frying)
  • Turnip-greens rice:
  • 2 cups water
  • 1 cup rice
  • 500 g of turnip-greens
  • 1 small onion
  • 1/2 dl olive oil

Directions:
Clean and gut the mackerel and season them with salt, several hours before frying.
Wash them rapidly in cold water, dust them with flour, then firy them in really hot oil.

For the rice:
Mince the onion finely, place it in a pan with the olive oil and let it fry till it becomes golden.
Choose the most tender leaves of the tumip-greens and wash them well.
Add them to the onion and let it all cook for a few minutes.
Now add the water. When it boils up, add the well-washed rice.
When it is nearly cooked, rectify the seasoning.
