In Portuguese: Bacalhau à Brás
Ingredients:
- 4 slices of dried and salted codfish (whích has been soaked in cold water, overnight)
- 2 medium onions
- 750 g potatoes
- 1.5 dl olive oil
- 3 cloves garlic
- 2 bay leaves
- 6 eggs
- 1 bunch parsley
- salt, pepper to taste
Directions:
Put the olive oil in a deep, wide pan, add the sliced onions and the minced garlic. Let it become golden, but not brown or dry.
Now add the shredded codfish and let it fry a little. Take off the fíre.
Peel the potatoes and cut them ínto very thín stríps (pommes-paille). Fry in hot oil. When done, join them to the codfish.
In a basin, beat the eggs with a little salt and pepper.
Return the pan to the fire and add the eggs, which should remain damp and underdone.
Serve, ornamented with minced parsley.
